#112 : Paring knife with a smooth blade for all preparations: slicing, mincing, peeling fruits and vegetables. Without a doubt the most versatile!
#113 : Faithful tomato knife! Equipped with a 10 cm micro-serrated blade, the Serrated is the ideal knife for perfectly slicing and cutting fragile or tender foods: tomatoes, sausages, hard-boiled eggs.
#114 : Curved blade with scraper back, it is called vegetable knife, turning knife or bird's beak knife, you will love it for peeling round fruits and vegetables. Ideal for organic and new vegetables.

Sandvik Stainless Steel Blade
The Sandvik stainless steel developed for Opinel is renowned for its sharpness and ease of maintenance. Stainless steel capable of undergoing the heat treatment that gives it its good hardness is called martensitic. It has a carbon content of at least 0.40%, which allows for a very satisfactory sharpness without being sensitive to corrosion.
Natural varnished beech handle
Beech : Covers about 10% of French forests. Beech is one of the most elegant trees, with a smooth trunk and dense foliage that prunes very well. White or very pale brown in color, its grain is fine and its structure is uniform and straight-grained. Beech wood is one of the most resistant.
Handle in colored glazed hornbeam
Sourcing: France. Medium-sized tree, with dense foliage (toothed leaves) with a fluted trunk with thin, smooth gray bark. Very hard and very resistant wood, light gray. Used for the manufacture of tools, billiard cues, and formerly butchers' stalls and yokes.
